It is necessary to find the right balance between technological maturation, the relationship between sugars and acids, phenolic maturation, the concentration of substances that give color and structure to the wine and the aromatic maturation of the grapes. For the Camporè company, the harvest period is usually marked by different times: usually late September / early October for Etna Bianco and mid-October for Etna Rosato and Rosso.
